How to Start and Manage a Fire for Cooking Roasts or Stews

  • Turn on the motor of the oven floor so it can heat up evenly
  • Keep the fire going until the oven floor reaches a temperature of around 220°C. (check with the laser thermometer)
  • Stop the rotating floor, place your roast in the oven and switch on the rotating stone again
  • Keep the fire going but with just small flames while cooking
  • If the flames are too lively at the start you can cover the roast with some aluminium foil.
  • Leave the foil till the flames are more moderate
  • No need for turning the dish around as your roast will get nice and evenly cooked due to the rotation of the cooking floor
  • Check every now and then through the viewing glass of the door.
