The following tips should help you out:
  • Make sure the wood is dry
  • Allow around 10 to 15 minutes heat up time for cooking roasts, stews, and
    around 20 minutes
     for baking pizza
  • Add wood to the fire gradually
  • Using your oven when raining or very windy is fine, but allow for longer cooking times
    as the
fire will struggle to burn properly
  • Make sure the wood you use if of high-density quality. If you are using softwoods, like pine, they burn quickly and thus looses all it's heat quickly too
  • Do not use fire wood from hardware stores or fuel stations, it is hardly ever good quality and high density wood. It is ok for fire pits, but just not for cooking
  • Please note that the thermometer that is inserted in the oven door is not fully accurate.
This because it only measures the temperature of the air at the front of the oven and not
of the oven floor stone. For accurate temperature measurement we recommend using a handheld laser thermometer, like the one that comes for free with your Piccolo.
  • Also, opening the door often will make the temperature drop as the heat goes out. Just check the progress of your cooking through the door's viewing glass.
